Millet with pumpkin

Millet is a wonderful grain that soothes the pancreas and strengthens digestion. Together with pumpkin, it provides a sweet taste that regulates blood glucose levels. It can be used medicinally and it´s good for conditions such as diabetes. Try it!


  • 1 cup millet
  • 2 cups of spring water
  • 1 pinch of salt
  • 1 cup of (diced) pumpkin


  1. Rinse the millet several times and toast it lightly in a pan. This way we will reduce its slightly bitter taste and boost its sweetness.
  2. Next, add the other ingredients. Bring to a boil and then lower the heat and cook for 20 minutes or until all the water has been absorbed.
  3. Serve with a teaspoon of gomasio or finely chopped parsley.
