This is a summer salad that refreshes and provides minerals, vitamins and protein.
Preparation: 10 min
INGREDIENTS:
- 1 block of smoked tofu
- Green leaves (lettuce hearts, dandelion, endive, lettuce, lamb´s lettuce …)
- Nuts
- Sunflower or pumpkin seeds, lightly toasted
- Raisins
- Grated carrot
- Pressed radishes (add a pinch of salt and press between two plates orsqueeze).
- Dulse (presoaked 5 minutes)
PREPARATION:
- Cut the tofu into cubes, boil them 10 minutes and marinate with a little soy sauce and ginger juice and a little oregano sprinkled on top (marinate for 30 minutes)
- Meanwhile prepare a salad in a bowl with all the other ingredients.
- Add the marinated tofu and mix well.
- Season with a vinaigrette sauce made with tahini (1 tbs) oil (4 tbs) umeboshi vinegar (1 tbs) molasses rice (1 tbs) and lemon juice (1 tbs).
