RICE PUDDING WITH APPLE AND LEMON

This is a delicious dessert but can be too “filling” if made with brown rice, which is very nutritious and dense. For this reason it is usually made with white rice. In this case I suggest you use semi-brown rice. Remember that I do not recommend that you finish your meals with a dessert. Sweet desserts should be eaten some time after the end of the meal, or in the middle of the afternoon, to avoid fermentation and heavy and slow digestion.

INGREDIENTS (6 servings)

½ cup semi-whole grain rice (1 cup=200 ml) washed and drained several times to remove impurities.
2 ½ cups organic apple juice.
1 tbsp. grated lemon zest.
½ cup of organic dried sultanas or dried apricots, washed and drained.
1 apple, peeled and cut into small cubes.
¼ c.c. salt.

PREPARATION

Place all the ingredients in a saucepan.
Bring to the boil. Boil the rice together with the apple juice, salt, lemon zest and sultanas and/or dried apricots.
When the rice starts to boil, lower the flame, put the lid on and cook for 20 minutes at minimum heat. Use a flame diffuser if you have a gas cooker.
Finally add the apple and cook on low heat for 1 min or until soft.
Store in the fridge and serve in separate glasses with a little cinnamon sprinkled on top. Decorate according to your taste. It is a delicious and filling dessert.
