In days of celebration we are sometimes overwhelmed. We feel compelled to get the best out of our culinary skills to impress those we cook for.
But do not be fooled. There are many options to make easy and healthy desserts without them being complicated or time-consuming. Here we introduce one of them. I learned it from the world’s best cooks, my mother. And it’s great for those days when you have to live up to expectations but you do not have much time.
INGREDIENTS
- For the applesauce: several apples, raisins, cinnamon, lemon zest, dried apricots.
- For the almond cream with soy yogurt: 1 sugar-free soy yogurt, 2 tbs. of almond cream, 1 tbs. of apple concentrate.
- 1/4 cup of thin or thick porridge oat flakes
PREPARATION
👉 Firstly, make the applesauce with raisins, dried apricots. cinnamon…
👉Then roast the porridge oatflakes with a little concentrated apple juice. They should be lightly browned, but be careful not to toast them too much.
👉 Mix the soy yogurt with the almond cream and the concentrated apple juice in a bowl, mix well.
👉 Set layers in glasses:
- 1️⃣Firstly, the flakes
- 2️⃣Then, the appleasauce
- 3️⃣Then, the yogurt-almond cream mixture.
Finally, sprinkle some toasted chopped almonds for a crunchier texture and/or some dehydrated raspberries for colour.
