Apple crumble

Here we go with this amazing sugar-free apple crumble, a recipe that reminds me a lot of my stay in England and that wonderful mouth-watering apple crumble with ice cream I used to enjoy so much. Unfortunaly it was full of sugar and really bad for me … (sigh!)…
Introducing an alternative that you can use in a thousand ways, in your morning porridge, as dessert, etc … endless possibilities, up to you!

INGREDIENTS FOR THE FILLING:

  • 1 kg of apples peeled and chopped into quarters
  • 250 g of wild berries (can be frozen)
  • 2 c.c. cinnamon powder
  • 2 c.s. rice syrup or barley (optional)
  • 1 c.s. orange zest
  • Pinch of salt

INGREDIENTS FOR “CRUMBLE”:

  • 1/2 kg thin oat flakes (I personally like them more than coarse ones)
  • 100 g peeled almonds
  • 100 g of walnuts
  • 100 g of raisins
  • Zest of two lemons
  • 1 tbs fresh mint leaves
  • 1 small cup of olive oil
  • 1 small cup of rice syrup
  • 1 tsp of vanilla essence or vanilla powder
  • A little bit of salt

PREPARATION:

– For the filling:

  1. Peel, core and chop the apples into quarters.
  2. Then cut them into thin slices and put them in a baking tray with a pinch of salt and cinnamon.
  3. Add the berries. You can now add rice syrup or not (optional). I have chosen not to, because apples are already sweet enough for me.
  4. Mix in the orange zest. Mix well and set aside.

– For “Crumble”:

  1. Mix very well all the crumble ingredients in a big bowl and spread them on the apples we had previously prepared.
  2. Put the baking dish (pre-heated to 170ºC) and wait until the cake is lightly golden (around 20 min).
