MILLET BURGERS

Millet is an unexpected superfood. Its ability to purify the blood and regulate blood glucose levels makes it suitable for diabetics. These burguers combine it with tofu in an attractive “fast-food” way for demanding audience such as children. This combination is full of high biological value proteins and… they look stunning! Give them a try!

Ingredients

  • Olive oil
  • 1 chopped onion
  • 1 cup millet
  • 3 cups of water
  • 1 pinch of unrefined sea salt
  • 250 gr of smoked tofu
  • Fresh basil
  • 1 carrot
  • Shoyu to taste
  • Umeboshi vinegar to taste

Preparation

Chop the onion and sauté in a pan with a little oil
Rinse the millet several times and add it to the onion, stirring to lightly toast it
Add 3 cups of water. Bring to a boil and add a pinch of salt
Let cook for 25 minutes
Take it to a glass bowl and let it cool up
Add grated smoked tofu, finely chopped basil and grated carrot
Add a few drops of shoyu and umeboshi vinegar to taste
Mix well
Scoop out bits dough and shape croquettes or hamburgers
Coat cornmeal (polenta) and sauté in a pan with a little oil over low heat until a crust is formed.
Another option is to put them in the oven at 180ºC for 10 minutes. In this case, they should be placed on parchment, brushed with oil, splashing some oil over the burgers. You can sprinkle some dried oregano on top too.
At the end, serve them with a little salad or with tofu mayonnaise with herbs.
